I love chocolate pies, and I cannot lie!
Ok…enough of that poetry nonsense. But I can’t help but wax poetic about chocolate pies, especially when one tastes as good as this one, and feels as guilt free!
Raw Vegan Chocolate Silk Pie
Frozen persimmons, slightly defrosted – 1/4 cup
Walnuts or Pecans – 1 cup
Oat Flour – 1/2 cup
Pitted Soaked Dates – 1 cup
Flax Meal, roughly ground – 1/2 cup
Frozen Bananas – 2
Coconut Milk – 1 full can
Cacao Powder – 2 Tbsp
Vanilla Extract – 1 tsp
Coconut Sugar – 1/2 cup
Extras: cacao nibs for decoration, and raw finely shredded coconut.
For the crust: blend all ingredients together in a food processor, pulse until a “dough” forms. sprinkle raw shredded coconut on bottom of pie pan for easy cutting later. Press dough into pie dish. Throw in the freezer for about 20 min to firm up.
For the filling: blend all ingredients together in a food processor or highspeed blender like a Vitamix. Pour into pie dish. Freeze for approximately 4 hrs or over night. Before serving, let it thaw out for about 20 minutes.
